When Wendy and I had the idea of starting a restaurant all that time ago, people must have thought we were bonkers! For a start we both had careers running our own businesses and were busy enough with all that we had on our plates. However we thought that we could push against our own limits a smidge more and open The Carreg (which means Stone in Welsh, referring to our stone grill cooking system). But that seems ages ago now! This year we were extremely privileged to be included in The Western Mails’ (Wales’ only national daily newspaper) Hot 100 up and coming companies! Wow! We were also nominated for a Best Eaterie award on UKfood on Satellite Television! This is fantastic! Each day, as we open the doors, The Carreg Experience is reaching out to a wider and wider audience!
This summer we opened the Tranquility Garden, so now we have our own chicken, goats and ducks, oh my! (Or is that ‘The Wizard of Oz’?) We really want to make the earth a better place to live by reducing our carbon footprint as much as we can. We recycle as much as we can- can anyone tell me why Pembrokeshire County Council still do not have a commercial plastic recycling scheme? We have our own fresh free range eggs, seasonal vegetables and we favour bio-degradeable products whenever possible. And we have a link to Greenpeace
Opening a restaurant when we were already so busy was always going to be a gamble, but as a wise man once told me ”Jump off the edge of a cliff, build your wings on the way down.”
